A delightful combination of fresh spinach, sweet apple, and creamy yogurt, perfect for snacks or appetizers.

Ingredients

  • 2 cups fresh spinach, chopped
  • 1 medium apple (Granny Smith or Honeycrisp), diced
  • 1 cup plain yogurt (Greek or any plain)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (dill or mint), optional

Instructions

  1. Rinse and pat dry the fresh spinach, then chop it coarsely.
  2. Heat olive oil in a skillet over medium heat, add chopped spinach, and sauté until wilted (about 2-3 minutes). Season with salt and pepper, and let it cool.
  3. Dice your apple into small cubes.
  4. In a mixing bowl, combine the sautéed spinach, diced apple, and yogurt. Add chopped herbs if desired.
  5. Blend until well combined, adjusting seasoning as needed.
  6. Spoon the mixture into bite-sized molds or form into balls and place on a parchment-lined tray.
  7. Chill in the fridge for at least 30 minutes before serving.

Notes

Feel free to substitute spinach with kale or Swiss chard. For a dairy-free option, use a dairy-free yogurt alternative.
