Ingredients
- 2 cups fresh spinach, chopped
- 1 medium apple (Granny Smith or Honeycrisp), diced
- 1 cup plain yogurt (Greek or any plain)
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh herbs (dill or mint), optional
Instructions
- Rinse and pat dry the fresh spinach, then chop it coarsely.
- Heat olive oil in a skillet over medium heat, add chopped spinach, and sauté until wilted (about 2-3 minutes). Season with salt and pepper, and let it cool.
- Dice your apple into small cubes.
- In a mixing bowl, combine the sautéed spinach, diced apple, and yogurt. Add chopped herbs if desired.
- Blend until well combined, adjusting seasoning as needed.
- Spoon the mixture into bite-sized molds or form into balls and place on a parchment-lined tray.
- Chill in the fridge for at least 30 minutes before serving.
Notes
Feel free to substitute spinach with kale or Swiss chard. For a dairy-free option, use a dairy-free yogurt alternative.
