Ingredients

  • 2 ½ cups whole wheat flour (or oat/almond flour)
  • 1 teaspoon cinnamon
  • 1 medium sweet potato, cooked and mashed
  • ½ cup natural peanut butter (or sunflower seed butter)
  • 1 egg (or flax egg for vegan option)
  • 1 tablespoon honey (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Combine 2 ½ cups of whole wheat flour and 1 teaspoon of cinnamon in a large mixing bowl.
  3. Mash one medium sweet potato and mix in ½ cup of natural peanut butter, 1 egg, and 1 tablespoon of honey in another bowl.
  4. Stir gradually in the dry ingredients until fully combined to achieve soft dough.
  5. Roll the dough onto a floured surface to about ¼ inch thick and use cookie cutters to cut into shapes.
  6. Place the cutouts on the baking sheet, ensuring they do not touch.
  7. Bake for 20-25 minutes or until the edges begin to turn golden.
  8. Allow the treats to cool on a wire rack before serving.

Notes

For softer treats, bake for less time. Store in an airtight container for freshness.
