Ingredients
- 1 cup unsweetened peanut butter
- 1 cup pumpkin puree (plain)
- 1 egg
- 2 ½ cups whole wheat flour
- 1 pinch cinnamon
Instructions
- Preheat your oven to 350°F (175°C) and prep a baking sheet with parchment paper.
- Combine peanut butter, pumpkin puree, and egg in a large bowl, stirring until well mixed.
- Add whole wheat flour gradually, mixing until a dough forms.
- Roll out the dough about ½ inch thick on a floured surface and cut with cookie cutters.
- Place cookies on the baking sheet and bake for 25-30 minutes until golden brown.
- Let them cool completely before serving.
Notes
Store cookies in an airtight container at room temperature for up to a week, or refrigerate/freezer for longer storage.
