Festive French macarons with a delightful filling, perfect for holiday celebrations.

Ingredients

  • 1 ¾ cups almond flour
  • 1 ¼ cups powdered sugar (sifted)
  • 3 large egg whites
  • ¾ cup granulated sugar
  • Red food coloring
  • Green food coloring
  • Filling of your choice (chocolate ganache or peppermint buttercream)

Instructions

  1. Preheat your oven to 300°F (150°C) and line two baking sheets with parchment paper.
  2. In a large bowl, whip egg whites until frothy. Gradually add granulated sugar and continue to whip until stiff peaks form (5-7 minutes).
  3. In a separate bowl, sift together almond flour and powdered sugar. Gently fold this into the meringue with a spatula.
  4. If using food coloring, divide the mixture and add colors as desired before transferring to a piping bag.
  5. Pipe small rounds onto the baking sheets, about an inch apart, and allow them to rest at room temperature for 20-30 minutes.
  6. Bake for 15-18 minutes, until firm.
  7. Cool completely on a wire rack before piping your filling and sandwiching the shells.
  8. Allow filled macarons to set in the fridge for a few hours to meld flavors before serving.

Notes

Use a kitchen scale for accurate measurements. Allow macarons to rest before baking for perfect texture. Store in airtight container at room temperature.
