- 2 salmon fillets
- 4 cups fresh spinach
- 2 cloves garlic, minced
- 2 tablespoons butter
- 2 tablespoons lemon juice
- Fresh herbs (dill, parsley, or basil)
- Salt and pepper to taste
Instructions
- Prepare the Ingredients: Start by rinsing the spinach and patting it dry. Season your salmon fillets with salt, pepper, and a drizzle of lemon juice.
- Sauté the Spinach: In a skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Toss in the spinach, cooking just until it wilts down.
- Cook the Salmon: Push the spinach to the side of the skillet and add the salmon fillets. Cook for about 4-5 minutes on each side until the salmon flakes easily with a fork.
- Combine and Serve: Gently mix the spinach back in with the salmon and drizzle a little more lemon juice before serving. Garnish with freshly chopped herbs.
Notes
Always watch the salmon closely as overcooking can lead to a dry texture. A meat thermometer should read 145°F for perfectly done salmon.
