A delightful dish combining the richness of salmon with the vibrant flavors of sautéed spinach, garlic, and lemon, creating a comforting yet elegant meal.

  • Total Time: 25 minutes
  • Yield: 2 servings

Ingredients

  • 2 salmon fillets
  • 4 cups fresh spinach
  • 2 cloves garlic, minced
  • 2 tablespoons butter
  • 2 tablespoons lemon juice
  • Fresh herbs (dill, parsley, or basil)
  • Salt and pepper to taste

Instructions

  1. Prepare the Ingredients: Start by rinsing the spinach and patting it dry. Season your salmon fillets with salt, pepper, and a drizzle of lemon juice.
  2. Sauté the Spinach: In a skillet, melt the butter over medium heat. Add minced garlic and sauté until fragrant. Toss in the spinach, cooking just until it wilts down.
  3. Cook the Salmon: Push the spinach to the side of the skillet and add the salmon fillets. Cook for about 4-5 minutes on each side until the salmon flakes easily with a fork.
  4. Combine and Serve: Gently mix the spinach back in with the salmon and drizzle a little more lemon juice before serving. Garnish with freshly chopped herbs.

Notes

Always watch the salmon closely as overcooking can lead to a dry texture. A meat thermometer should read 145°F for perfectly done salmon.
