Ingredients

  • 2 cups all-purpose flour
  • 2 tablespoons unsweetened cocoa powder
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 2 tablespoons red food coloring
  • 1 teaspoon vanilla extract
  • 8 oz cream cheese
  • 1/4 cup butter
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a large bowl, sift together the flour, cocoa powder, baking soda, baking powder, and salt.
  3. In another bowl, whisk together the vegetable oil, granulated sugar, brown sugar, eggs, buttermilk, vanilla extract, and food coloring until well combined.
  4. Gradually add the dry ingredients to the wet mixture, gently folding until just combined.
  5. Using a cookie scoop or tablespoon, drop rounded tablespoons of dough onto the prepared baking sheet, leaving space in between each mound.
  6. Bake for 10-12 minutes, or until the tops are set and spring back lightly when touched. Let cool on the pan for a few minutes before transferring them to a wire rack.
  7. For the filling, beat together the cream cheese, butter, powdered sugar, and a splash of vanilla extract until creamy and smooth.
  8. Once the cookies have cooled, spread a generous spoonful of filling onto the flat side of one cookie and sandwich it with another cookie.

Notes

For a healthier option, try whole wheat flour or a gluten-free blend. Also, you can opt for natural food coloring alternatives.
