Instructions
- Preheat your oven to 350°F (175°C) and prepare your baking sheet with parchment paper.
- Combine 1 cup of peanut butter, 1 cup of pumpkin puree, and 1/2 cup of brown sugar in a mixing bowl until smooth.
- Incorporate 1 1/2 cups of flour, 1 teaspoon of baking powder, and 1/2 teaspoon of baking soda, stirring until just combined.
- Add 1 teaspoon of cinnamon, a pinch of nutmeg, and a tiny pinch of salt to the mixture.
- Scoop round dollops of batter onto the baking sheet, leaving space for spreading.
- Bake for about 15-18 minutes until the edges feel set; the centers should remain soft.
- Cool on the baking sheet for a few minutes before transferring to a wire rack to firm up.
