- 2 ripe bananas, mashed
- 1 cup pumpkin puree
- 2 cups all-purpose flour
- 1 cup brown sugar
- 2 eggs
- 1 tsp baking soda
- 1 tsp baking powder
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- 1/2 cup maple syrup
- 1/4 cup melted butter (or yogurt for lighter version)
- 1/2 tsp salt
Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the mashed bananas, pumpkin puree, eggs, melted butter, and maple syrup until smooth.
- In another bowl, whisk together the flour, brown sugar, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gently fold the dry ingredients into the wet ingredients until just combined.
- Pour the batter into a greased loaf pan and smooth the top.
- Bake for 55-65 minutes or until a toothpick comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack.
- Prepare the maple glaze by heating maple syrup until warm and drizzle it over the cooled bread.
Notes
For added flavor, consider folding in chopped nuts or chocolate chips before baking. Letting the bread sit for a day enhances the flavors.
