Ingredients
- 1 cup pumpkin puree
- 1 cup all-purpose flour (or gluten-free blend)
- 1 cup granulated sugar (or coconut sugar)
- 2 eggs (or flax eggs)
- 1 tsp baking powder
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/2 tsp ground ginger
- Icing: 1 cup powdered sugar
- 2-3 tbsp milk or cream
Instructions
- Preheat your oven to 350°F (175°C) and prepare a baking sheet.
- Mix the dry ingredients: whisk together flour, sugar, spices, and baking powder in a bowl.
- Blend the wet ingredients in another bowl: combine pumpkin puree, eggs, and any extras.
- Combine the wet and dry mixtures until just combined to avoid overmixing.
- Shape the dough into small balls (about 1 inch) and space them on the baking sheet.
- Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
- Cool the balls on a wire rack for a few minutes before drizzling icing on top.
