Delightful pumpkin balls that are soft, sweet, and bursting with warm spices, perfect for autumn gatherings.

  • Total Time: 35 minutes
  • Yield: 24 servings

Ingredients

  • 1 cup pumpkin puree
  • 1 cup all-purpose flour (or gluten-free blend)
  • 1 cup granulated sugar (or coconut sugar)
  • 2 eggs (or flax eggs)
  • 1 tsp baking powder
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground ginger
  • Icing: 1 cup powdered sugar
  • 2-3 tbsp milk or cream

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a baking sheet.
  2. Mix the dry ingredients: whisk together flour, sugar, spices, and baking powder in a bowl.
  3. Blend the wet ingredients in another bowl: combine pumpkin puree, eggs, and any extras.
  4. Combine the wet and dry mixtures until just combined to avoid overmixing.
  5. Shape the dough into small balls (about 1 inch) and space them on the baking sheet.
  6. Bake for 15-20 minutes until golden brown and a toothpick comes out clean.
  7. Cool the balls on a wire rack for a few minutes before drizzling icing on top.
  8. Enjoy with friends and family or keep them all to yourself!
