Ingredients
- 2 cups pulled pork (leftover or slow-cooked)
- 1 cup barbecue sauce
- 4 cups potatoes (russet or Yukon gold), peeled and diced
- 2 cups sharp cheddar cheese or a mix of cheeses
- 1 cup diced onions
- 1 cup diced bell peppers
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt, to taste
- Pepper, to taste
- Butter, for mashing potatoes
- Cream, for mashing potatoes
Instructions
- Preheat your oven to 350°F (175°C).
- In a large skillet, sauté diced onions and bell peppers over medium heat until softened. Stir in pulled pork and barbecue sauce, allowing flavors to meld for a few minutes.
- Boil diced potatoes in salted water until fork-tender, about 15 minutes. Drain and mash with butter, cream, garlic powder, salt, and pepper.
- In a greased baking dish, spread the pork mixture evenly, then layer the mashed potatoes on top and sprinkle with cheese.
- Bake for 25-30 minutes until bubbly and golden. Broil for an extra crispy finish if desired.
Notes
For best results, season the pork and slow-cook for several hours. Adjust flavors to personal preference while cooking.
