Ingredients

  • 2 cups pulled pork (leftover or slow-cooked)
  • 1 cup barbecue sauce
  • 4 cups potatoes (russet or Yukon gold), peeled and diced
  • 2 cups sharp cheddar cheese or a mix of cheeses
  • 1 cup diced onions
  • 1 cup diced bell peppers
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt, to taste
  • Pepper, to taste
  • Butter, for mashing potatoes
  • Cream, for mashing potatoes

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large skillet, sauté diced onions and bell peppers over medium heat until softened. Stir in pulled pork and barbecue sauce, allowing flavors to meld for a few minutes.
  3. Boil diced potatoes in salted water until fork-tender, about 15 minutes. Drain and mash with butter, cream, garlic powder, salt, and pepper.
  4. In a greased baking dish, spread the pork mixture evenly, then layer the mashed potatoes on top and sprinkle with cheese.
