Ingredients

  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 2 cups all-purpose flour
  • 3/4 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon peppermint extract
  • 1 cup semi-sweet chocolate chips or chunks
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda

Instructions

  1. Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together butter, granulated sugar, and brown sugar until light and fluffy (4-5 minutes).
  3. Add eggs one at a time, mixing well, then stir in peppermint extract.
  4. Sift together flour, cocoa powder, baking powder, and baking soda in a separate bowl.
  5. Gradually add dry mixture to wet mixture and mix until just combined.
  6. Fold in chocolate chips until evenly dispersed.
  7. Scoop dough onto prepared baking sheet, spacing 2 inches apart. Flatten slightly.
