Ingredients
- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 cup brown sugar
- 2 cups all-purpose flour
- 3/4 cup unsweetened cocoa powder
- 2 large eggs
- 1 teaspoon peppermint extract
- 1 cup semi-sweet chocolate chips or chunks
- 1 teaspoon baking powder
- 1 teaspoon baking soda
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cream together butter, granulated sugar, and brown sugar until light and fluffy (4-5 minutes).
- Add eggs one at a time, mixing well, then stir in peppermint extract.
- Sift together flour, cocoa powder, baking powder, and baking soda in a separate bowl.
- Gradually add dry mixture to wet mixture and mix until just combined.
- Fold in chocolate chips until evenly dispersed.
- Scoop dough onto prepared baking sheet, spacing 2 inches apart. Flatten slightly.
- Bake for 10-12 minutes, allowing to cool slightly before serving.
Notes
For best results, use quality chocolate and let the cookies cool on the baking sheet a few minutes before transferring them.
