Ingredients
- Slices of fresh rye or pumpernickel bread
- 8 ounces sliced pastrami
- 4 ounces Swiss cheese
- 2 cups shredded broccoli stems and florets
- 1 cup shredded carrots
- 1/4 cup mayonnaise
- 2 tablespoons apple cider vinegar
- 1 tablespoon honey
- Salt and pepper to taste
- Optional: Fresh herbs (dill or parsley), sliced pickles, mustard
Instructions
- In a large bowl, combine shredded broccoli stems, florets, and carrots.
- In another bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour over the slaw and mix well. Set aside in the fridge.
- In a skillet, warm the pastrami over medium heat for 3-4 minutes.
- Toast the slices of bread until golden brown.
- Layer warm pastrami on one slice of bread, add broccoli slaw, and top with Swiss cheese.
- Heat a skillet over medium-low heat and grill the sandwich until the cheese melts and both sides are crispy, about 3-4 minutes per side.
- Slice in half and serve immediately with chips or a salad.
Notes
For a healthier option, use lower sodium pastrami and enjoy with fresh vegetable sides.
