Ingredients

  • Slices of fresh rye or pumpernickel bread
  • 8 ounces sliced pastrami
  • 4 ounces Swiss cheese
  • 2 cups shredded broccoli stems and florets
  • 1 cup shredded carrots
  • 1/4 cup mayonnaise
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper to taste
  • Optional: Fresh herbs (dill or parsley), sliced pickles, mustard

Instructions

  1. In a large bowl, combine shredded broccoli stems, florets, and carrots.
  2. In another bowl, whisk together the mayonnaise, apple cider vinegar, honey, salt, and pepper. Pour over the slaw and mix well. Set aside in the fridge.
  3. In a skillet, warm the pastrami over medium heat for 3-4 minutes.
  4. Toast the slices of bread until golden brown.
  5. Layer warm pastrami on one slice of bread, add broccoli slaw, and top with Swiss cheese.
  6. Heat a skillet over medium-low heat and grill the sandwich until the cheese melts and both sides are crispy, about 3-4 minutes per side.
  7. Slice in half and serve immediately with chips or a salad.

Notes

For a healthier option, use lower sodium pastrami and enjoy with fresh vegetable sides.
