Ingredients
- 2 ½ cups all-purpose flour
- 1 cup unsalted butter, softened
- 1 ½ cups granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- ½ teaspoon baking powder
- ½ teaspoon salt
- 1 cup unsalted butter (for filling), softened
- 3 cups powdered sugar
- 1 teaspoon vanilla extract (for filling)
- Food coloring (your choice of pastel colors)
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the egg and vanilla extract, mixing well.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually incorporate the dry ingredients into the wet mixture until a dough forms.
- Roll the dough into 1.5-inch balls and flatten them slightly. Place them on a baking sheet lined with parchment paper.
- Bake for 10-12 minutes, or until the edges are lightly golden. Let them cool completely.
- In a bowl, beat the softened butter for the filling until creamy.
- Gradually add the powdered sugar and continue to mix until smooth.
- Add in the vanilla extract and mix well. Divide the filling into small bowls and color each with food dye to your desired pastel shades.
- Take one cookie and spread a generous amount of the filling on the flat side.
- Top with another cookie, flat side down, and gently press together.
- Repeat until all cookies are filled and assembled.
Notes
Chill the filling for about 20 minutes for easier spreading. Keep cookies in an airtight container.
