Ingredients
- 1 lb ground pork sausage (or turkey/plant-based sausage)
- 2 cups pancake mix
- 3 large eggs
- 2 cups whole milk
- 1/2 cup maple syrup (or honey/agave syrup)
- 1/4 cup butter, melted
- 1 tsp vanilla extract
- Salt and pepper, to taste
- Optional mix-ins: spinach, mushrooms, herbs like thyme or parsley
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet over medium heat, brown the sausage until no longer pink. Drain excess grease.
- In a large bowl, mix the pancake mix with milk, eggs, and vanilla until smooth.
- In a greased casserole dish, layer the cooked sausage and pour the pancake batter over it.
- Drizzle with maple syrup.
- Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
- Let cool briefly, cut into squares, and serve warm with additional syrup.
Notes
For fluffier casserole, allow batter to rest before pouring into the dish. Use a glass or ceramic dish for even cooking.
