Ingredients

  • 1 lb ground pork sausage (or turkey/plant-based sausage)
  • 2 cups pancake mix
  • 3 large eggs
  • 2 cups whole milk
  • 1/2 cup maple syrup (or honey/agave syrup)
  • 1/4 cup butter, melted
  • 1 tsp vanilla extract
  • Salt and pepper, to taste
  • Optional mix-ins: spinach, mushrooms, herbs like thyme or parsley

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, brown the sausage until no longer pink. Drain excess grease.
  3. In a large bowl, mix the pancake mix with milk, eggs, and vanilla until smooth.
  4. In a greased casserole dish, layer the cooked sausage and pour the pancake batter over it.
  5. Drizzle with maple syrup.
  6. Bake for 25-30 minutes until golden brown and a toothpick inserted comes out clean.
  7. Let cool briefly, cut into squares, and serve warm with additional syrup.

Notes
