Ingredients
- 12 oz penne pasta
- 1 lb boneless, skinless chicken breasts, diced
- 8 oz cremini or button mushrooms, sliced
- 1/2 cup honey BBQ sauce
- 3 cloves garlic, minced
- 2 tbsp olive oil
- Fresh parsley or basil, for garnish
- Salt and pepper to taste
Instructions
- Gather your ingredients.
- Boil salted water and cook the penne until al dente. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add chicken, seasoning with salt and pepper, and cook for 6-8 minutes until done.
- Add garlic and mushrooms; sauté for 4-5 minutes until mushrooms soften.
- Stir in honey BBQ sauce, coat all ingredients, and mix in the cooked penne. Simmer for about 5 minutes.
- Remove from heat, stir in fresh herbs, and adjust seasoning as needed.
Notes
For added flavor, sprinkle crushed red pepper flakes for a spicier kick. If the dish gets too thick, add a splash of chicken broth to loosen it up.
