Ingredients
- 4 ripe bananas, sliced
- 1 1/2 cups vanilla wafers
- 4 cups whole milk (or 2%/almond milk)
- 2/3 cup granulated sugar (or brown sugar/honey)
- 1/3 cup cornstarch (or arrowroot powder)
- 3 large eggs
- 1 tablespoon vanilla extract
- 1 pinch salt
- Fresh whipped cream for topping
- Lemon juice to prevent browning
Instructions
- Slice bananas and toss with lemon juice.
- In a saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in milk and cook over medium heat until thickened.
- Beat eggs in a separate bowl. Temper the eggs with a bit of warm custard, then mix back into the saucepan. Cook for 2-3 more minutes until thickened.
- Stir in vanilla extract.
- Layer vanilla wafers, banana slices, and custard in a serving dish, repeating until ingredients are used up. Finish with custard on top.
- Cover and refrigerate for at least 4 hours or overnight.
- Before serving, top with fresh whipped cream and optional garnishes.
Notes
For extra flavor, consider adding a splash of bourbon to the custard or folding in whipped cream for a fluffier texture.
