Ingredients

  • 4 ripe bananas, sliced
  • 1 1/2 cups vanilla wafers
  • 4 cups whole milk (or 2%/almond milk)
  • 2/3 cup granulated sugar (or brown sugar/honey)
  • 1/3 cup cornstarch (or arrowroot powder)
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • 1 pinch salt
  • Fresh whipped cream for topping
  • Lemon juice to prevent browning

Instructions

  1. Slice bananas and toss with lemon juice.
  2. In a saucepan, whisk together sugar, cornstarch, and salt. Gradually whisk in milk and cook over medium heat until thickened.
  3. Beat eggs in a separate bowl. Temper the eggs with a bit of warm custard, then mix back into the saucepan. Cook for 2-3 more minutes until thickened.
  4. Stir in vanilla extract.
  5. Layer vanilla wafers, banana slices, and custard in a serving dish, repeating until ingredients are used up. Finish with custard on top.
  6. Cover and refrigerate for at least 4 hours or overnight.
  7. Before serving, top with fresh whipped cream and optional garnishes.
