Ingredients
- 2 cups rolled oats
- 1 cup diced vegetables (carrots, green beans, or sweet potatoes)
- 1 egg or 1 tablespoon chia seeds mixed with 2.5 tablespoons water
- 2 tablespoons fresh herbs (parsley or basil)
- 1 teaspoon garlic powder (optional)
- 1 tablespoon olive oil or coconut oil
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Mash the rolled oats to create a semi-fine texture in a large bowl.
- Chop the chosen veggies into small pieces, squeezing out excess moisture if necessary.
- Add the diced vegetables into the oat mixture and mix well.
- Crack the egg into the mixture (or add the chia seed mixture) to bind.
- Incorporate the fresh herbs and optional garlic powder, stirring until combined.
- Drop small mounds onto the baking sheet, spacing them out to allow for spreading.
- Drizzle a bit of oil on top if desired.
- Bake for 20-25 minutes, flipping halfway through until golden brown, then let cool before serving.
Notes
Store leftovers in the refrigerator for 3-5 days or freeze for 2-3 months. These fritters can also be crumbled into your dog’s regular food for picky eaters.
