Ingredients

  • 2 cups rolled oats
  • 1 cup diced vegetables (carrots, green beans, or sweet potatoes)
  • 1 egg or 1 tablespoon chia seeds mixed with 2.5 tablespoons water
  • 2 tablespoons fresh herbs (parsley or basil)
  • 1 teaspoon garlic powder (optional)
  • 1 tablespoon olive oil or coconut oil

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Mash the rolled oats to create a semi-fine texture in a large bowl.
  3. Chop the chosen veggies into small pieces, squeezing out excess moisture if necessary.
  4. Add the diced vegetables into the oat mixture and mix well.
  5. Crack the egg into the mixture (or add the chia seed mixture) to bind.
  6. Incorporate the fresh herbs and optional garlic powder, stirring until combined.
  7. Drop small mounds onto the baking sheet, spacing them out to allow for spreading.
  8. Drizzle a bit of oil on top if desired.
  9. Bake for 20-25 minutes, flipping halfway through until golden brown, then let cool before serving.

Notes

Store leftovers in the refrigerator for 3-5 days or freeze for 2-3 months. These fritters can also be crumbled into your dog’s regular food for picky eaters.
