Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup pumpkin puree (not pumpkin pie filling)
  • 1/2 cup powdered sugar
  • 1 1/2 cups graham cracker crumbs (plus more for rolling)
  • 1 teaspoon pumpkin pie spice
  • 1/2 teaspoon cinnamon
  • 1 teaspoon vanilla extract
  • Optional: white or dark chocolate for drizzling

Instructions

  1. In a medium bowl, beat cream cheese until smooth. Add pumpkin puree, powdered sugar, pumpkin pie spice, cinnamon, and vanilla; mix until fully combined and creamy.
  2. Stir in graham cracker crumbs until mixture is thick enough to scoop and roll. If too soft, add more crumbs 1 tablespoon at a time.
  3. Cover and refrigerate for at least 1 hour to firm up.
  4. Scoop mixture into 1-inch balls and roll between your palms. Coat in extra graham cracker crumbs or drizzle with melted chocolate.
