- 8 oz Cream cheese, softened (can substitute with ricotta)
- 1 cup Canned pumpkin puree (or fresh, well cooked)
- 1 cup Powdered sugar (honey or maple syrup for a healthier alternative)
- 2 teaspoons Pumpkin spice mix (or a blend of cinnamon, nutmeg, and ginger)
- 1 teaspoon Vanilla extract
- 1 cup Graham cracker crumbs (or any crushed cookie for rolling)
- Chopped nuts, optional, for added texture
Instructions
- In a large mixing bowl, combine softened cream cheese, pumpkin puree, powdered sugar, pumpkin spice, and vanilla extract, mixing on medium speed until smooth.
- Scoop out about a tablespoon and roll it into a ball.
- Roll each ball in graham cracker crumbs or chopped nuts until coated.
- Place on a baking sheet lined with parchment paper and refrigerate for at least 2 hours to firm up.
- Transfer to a serving platter and enjoy!
Notes
For added flavor, mix in mini chocolate chips or drizzle melted chocolate on top before serving.
