Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking soda
- 2 teaspoons ground ginger
- 1 teaspoon cinnamon
- Pinch of ground cloves
- 1/2 cup softened butter
- 1 cup granulated sugar
- 1/2 cup molasses
- 1/4 cup brown sugar
- Granulated sugar for rolling
Instructions
- Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
- In a bowl, whisk together the flour, baking soda, ginger, cinnamon, and cloves.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add the molasses and brown sugar to the butter mixture and mix until combined.
- Gradually add the dry ingredients to the wet mixture and stir until just combined.
- Form small balls (about one tablespoon each) and roll in granulated sugar.
- Place on the baking sheets, leaving space in between, and bake for 8-10 minutes until edges are set but centers are still soft.
- Let cookies cool on the baking sheets for a couple of minutes before transferring to a wire rack to cool completely.
Notes
For a twist, consider adding dark chocolate chunks or adjusting the spices to your taste. Ensure not to overbake for that chewy texture.
