Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon cinnamon
  • Pinch of ground cloves
  • 1/2 cup softened butter
  • 1 cup granulated sugar
  • 1/2 cup molasses
  • 1/4 cup brown sugar
  • Granulated sugar for rolling

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together the flour, baking soda, ginger, cinnamon, and cloves.
  3. Cream together the softened butter and granulated sugar until light and fluffy.
  4. Add the molasses and brown sugar to the butter mixture and mix until combined.
  5. Gradually add the dry ingredients to the wet mixture and stir until just combined.
  6. Form small balls (about one tablespoon each) and roll in granulated sugar.
  7. Place on the baking sheets, leaving space in between, and bake for 8-10 minutes until edges are set but centers are still soft.
  8. Let cookies cool on the baking sheets for a couple of minutes before transferring to a wire rack to cool completely.

Notes
