A delightful one-pan dish combining chicken, zucchini, and tomatoes for a healthy and delicious meal.

Ingredients

  • 2 boneless, skinless chicken breasts, cut into bite-sized pieces
  • 2 medium zucchinis, sliced into half-moons
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon dried basil
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional)
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
  2. In a large bowl, combine the chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and toss everything together.
  3. In a small bowl, mix together the oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes. Sprinkle this mixture over the chicken and vegetables, then toss again to coat.
  4. Transfer the mixture to the prepared baking dish and bake for 25-30 minutes until the chicken is cooked through and the vegetables are tender.
  5. Remove the dish from the oven, sprinkle the mozzarella and Parmesan cheese on top, and return it to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
  6. Garnish with chopped parsley and serve.

Notes

Feel free to add other vegetables or switch the chicken for shrimp or tofu. You can also marinate chicken for added flavor.
