Ingredients
- 2 boneless, skinless chicken breasts, cut into bite-sized pieces
- 2 medium zucchinis, sliced into half-moons
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon dried oregano
- 1/2 teaspoon dried basil
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional)
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Instructions
- Preheat your oven to 400°F (200°C) and grease a baking dish with olive oil.
- In a large bowl, combine the chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and toss everything together.
- In a small bowl, mix together the oregano, basil, smoked paprika, salt, black pepper, and red pepper flakes. Sprinkle this mixture over the chicken and vegetables, then toss again to coat.
- Transfer the mixture to the prepared baking dish and bake for 25-30 minutes until the chicken is cooked through and the vegetables are tender.
- Remove the dish from the oven, sprinkle the mozzarella and Parmesan cheese on top, and return it to the oven for an additional 5-10 minutes until the cheese is melted and bubbly.
- Garnish with chopped parsley and serve.
Notes
Feel free to add other vegetables or switch the chicken for shrimp or tofu. You can also marinate chicken for added flavor.
