Ingredients
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 2 medium lemons (zested and juiced)
- 2 large eggs
- 1/2 cup unsalted butter (melted)
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup powdered sugar (for frosting)
Instructions
- Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
- In a bowl, melt the unsalted butter. Mix in the granulated sugar, eggs, and vanilla extract until smooth.
- Zest the lemons and add it to your wet mixture, followed by the lemon juice.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture.
- Pour the batter into the prepared baking dish and bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs.
- Let the brownies cool in the pan for 15 minutes before transferring to a wire rack to cool completely.
- For frosting, whisk together powdered sugar, lemon juice, and enough water for a drizzle-able consistency. Spread over cooled brownies.
- Slice into squares and serve, garnished with lemon zest if desired.
Notes
For a sweet-salty contrast, top the frosted brownies with a pinch of sea salt.
