Ingredients

  • 1 cup all-purpose flour
  • 1 cup granulated sugar
  • 2 medium lemons (zested and juiced)
  • 2 large eggs
  • 1/2 cup unsalted butter (melted)
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar (for frosting)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, melt the unsalted butter. Mix in the granulated sugar, eggs, and vanilla extract until smooth.
  3. Zest the lemons and add it to your wet mixture, followed by the lemon juice.
  4. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture.
  5. Pour the batter into the prepared baking dish and bake for 20-25 minutes, or until a toothpick comes out with a few moist crumbs.
