Ingredients

  • 2 slices of sturdy bread (sourdough or whole grain)
  • 2 slices of sharp cheddar or creamy mozzarella cheese
  • 1/2 cup fresh button or shiitake mushrooms, sliced
  • 1 clove garlic, minced (or garlic powder)
  • 2 tablespoons unsalted butter

Instructions

  1. Clean and slice the mushrooms. Sauté them in a skillet over medium heat with a pat of butter, seasoning with salt and pepper.
  2. Once the mushrooms are golden brown, layer cheese on two slices of bread, adding sautéed mushrooms and garlic to one slice.
  3. Melt a teaspoon of butter in a clean skillet over medium heat, then place the sandwich in the pan. Grill until golden brown, about 2-3 minutes, then flip and repeat.
  4. Use a knife to score playful faces into the crust for a Jack O Lantern look.
  5. Once toasted, slice diagonally and serve hot, ideally with tomato soup.

Notes

Keep an eye on the skillet’s heat to avoid burning the bread. Using a mix of butter and olive oil can add flavor and prevent the butter from browning too quickly.
