Ingredients
- 2 slices of sturdy bread (sourdough or whole grain)
- 2 slices of sharp cheddar or creamy mozzarella cheese
- 1/2 cup fresh button or shiitake mushrooms, sliced
- 1 clove garlic, minced (or garlic powder)
- 2 tablespoons unsalted butter
Instructions
- Clean and slice the mushrooms. Sauté them in a skillet over medium heat with a pat of butter, seasoning with salt and pepper.
- Once the mushrooms are golden brown, layer cheese on two slices of bread, adding sautéed mushrooms and garlic to one slice.
- Melt a teaspoon of butter in a clean skillet over medium heat, then place the sandwich in the pan. Grill until golden brown, about 2-3 minutes, then flip and repeat.
- Use a knife to score playful faces into the crust for a Jack O Lantern look.
- Once toasted, slice diagonally and serve hot, ideally with tomato soup.
Notes
Keep an eye on the skillet’s heat to avoid burning the bread. Using a mix of butter and olive oil can add flavor and prevent the butter from browning too quickly.
