A festive, savory pie filled with roasted vegetables, garlic, and a touch of sweetness from maple syrup, perfect for holiday celebrations.

  • Total Time: 65 minutes
  • Yield: 8 servings

Ingredients

  • Mushrooms (portobellos, creminis, or mixed)
  • Onions (yellow or shallots)
  • Garlic (fresh or garlic powder)
  • Seasonal vegetables (spinach, kale, or sweet potatoes)
  • Herbs (fresh thyme or rosemary)
  • Cheese (goat cheese or sharp cheddar, optional)
  • Honey or maple syrup
  • Pie crust (homemade or store-bought)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Prepare the pie crust and fit it into a 9-inch pie pan. Poke holes in the bottom to prevent bubbles.
  3. In a skillet, heat olive oil and sauté chopped onions until translucent, then add minced garlic.
  4. Add mushrooms and cook until tender, about 5-7 minutes.
  5. Mix in remaining vegetables and herbs, sautéing for a few more minutes.
  6. Pour the mixture into the prepared crust, drizzle honey or maple syrup, and add cheese if desired.
  7. Cover with another layer of crust, cut slits for steam, and bake for 30-35 minutes until golden brown.
  8. Let cool slightly before slicing. Serve warm, room temperature, or chilled.

Notes

Feel free to experiment with different vegetables and spices for a unique twist. Allow the pie to cool before cutting for cleaner slices.
