Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the pie crust and fit it into a 9-inch pie pan. Poke holes in the bottom to prevent bubbles.
- In a skillet, heat olive oil and sauté chopped onions until translucent, then add minced garlic.
- Add mushrooms and cook until tender, about 5-7 minutes.
- Mix in remaining vegetables and herbs, sautéing for a few more minutes.
- Pour the mixture into the prepared crust, drizzle honey or maple syrup, and add cheese if desired.
- Cover with another layer of crust, cut slits for steam, and bake for 30-35 minutes until golden brown.
- Let cool slightly before slicing. Serve warm, room temperature, or chilled.
