Ingredients

  • 1 cup natural unsweetened peanut butter
  • 2 large eggs
  • ½ cup honey or molasses
  • 2 cups whole wheat flour (or oat/almond flour for gluten-free)
  • 1 tsp baking powder
  • Optional: low-sodium chicken or beef broth, pureed pumpkin, or a pinch of cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine peanut butter, eggs, and honey or molasses until creamy.
  3. Gradually add in whole wheat flour and baking powder, mixing until a soft dough forms.
  4. If using optional flavors, fold them in.
  5. Flour your work surface and roll out the dough to ¼ inch thick.
  6. Cut cookies into desired shapes and place them on a parchment-lined baking sheet.
  7. Bake for 15-20 minutes until golden brown.
