Ingredients
- 1 lb boneless chicken thighs or breasts, cut into bite-sized pieces
- 1 cup buttermilk
- 1 cup all-purpose flour
- 1/4 cup cornstarch
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- Vegetable or canola oil for frying
Instructions
- Marinate the chicken in buttermilk and a sprinkle of salt for at least 1 hour.
- In a separate bowl, mix flour, cornstarch, and spices to prepare the breading.
- Remove chicken from buttermilk and coat evenly in the flour mixture.
- Heat oil in a skillet to 350°F (175°C).
- Fry the chicken in small batches until golden brown, about 3-4 minutes per side.
- Drain on paper towels and season while hot.
- Serve with your favorite dipping sauces.

For a healthier option, consider using an air fryer. Allow leftover chicken to cool completely, then freeze in a container for up to three months.
