A delightful explosion of flavors, these crispy popcorn chicken bites are tender on the inside and perfect for sharing with family and friends.

  • Total Time: 75 minutes
  • Yield: 4 servings

Ingredients

  • 1 lb boneless chicken thighs or breasts, cut into bite-sized pieces
  • 1 cup buttermilk
  • 1 cup all-purpose flour
  • 1/4 cup cornstarch
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Vegetable or canola oil for frying

Instructions

  1. Marinate the chicken in buttermilk and a sprinkle of salt for at least 1 hour.
  2. In a separate bowl, mix flour, cornstarch, and spices to prepare the breading.
  3. Remove chicken from buttermilk and coat evenly in the flour mixture.
  4. Heat oil in a skillet to 350°F (175°C).
  5. Fry the chicken in small batches until golden brown, about 3-4 minutes per side.
  6. Drain on paper towels and season while hot.
  7. Serve with your favorite dipping sauces.

Notes

For a healthier option, consider using an air fryer. Allow leftover chicken to cool completely, then freeze in a container for up to three months.
