Ingredients
- 1 cup butter, softened (or coconut oil for dairy-free)
- 2 cups granulated sugar (or brown sugar for a caramel-like flavor)
- 4 large eggs
- ½ cup freshly squeezed lemon juice
- 1 tablespoon lemon zest
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon salt
- Powdered sugar for dusting (optional)
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan with butter or line it with parchment paper.
- Cream the butter and sugar together in a mixing bowl using an electric mixer until light and fluffy.
- Add the eggs one at a time, beating well after each addition.
- Stir in the fresh lemon juice and zest until fully incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually fold the dry ingredients into the wet mixture.
- Pour the batter into the prepared pan and spread it out evenly.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean.
- Let cool completely before dusting with powdered sugar and cutting into squares.
Notes
For extra excitement, try adding lemon extract for an intensified flavor. Refrigerating before cutting helps achieve cleaner slices.
