Ingredients
- 8 cups popped popcorn (about 1/2 cup unpopped kernels)
- 1/2 cup unsalted butter
- 4 cups mini marshmallows
- 3/4 cup rainbow sprinkles
- 1/2 teaspoon vanilla extract (optional)
- Pinch of salt
Instructions
- Pop the popcorn using your preferred method and place it in a large mixing bowl.
- Melt the butter in a saucepan over low heat, then stir in the marshmallows until smooth.
- Pour the melted marshmallow mixture over the popcorn and fold until coated.
- Sprinkle in the rainbow sprinkles and gently fold them in.
- While warm, form clusters or spread the mixture onto a lined baking sheet.
- Allow the treats to cool completely before serving.
Notes
For a vegan option, use vegan butter. You can also add mini chocolate chips for an extra treat.
