Ingredients

  • 2 cups fresh carrots, chopped
  • 1/2 cup water or low-sodium chicken broth
  • Optional: 1/4 cup unsweetened peanut butter
  • Optional: 1/4 cup pureed pumpkin

Instructions

  1. Prep the carrots by washing and peeling them, then chop into small pieces.
  2. Puree the chopped carrots in a pot with enough water to steam until tender, about 10-15 minutes. Drain and blend until smooth.
  3. Mix in the water or broth gradually, adding peanut butter or pumpkin if desired.
  4. Fill ice cube trays or silicone molds with the mixture.
  5. Freeze for at least 4 hours until solid.
