Instructions
- Prepare the bananas: In a mixing bowl, mash 1 cup of ripe bananas until creamy.
- Mix dry ingredients: In a separate bowl, combine 1 cup of whole wheat flour, 1 teaspoon of baking powder, and a pinch of cinnamon (optional).
- Combine mixtures: Add the dry ingredients to the mashed bananas. Mix well, then add 1 beaten egg and 2 tablespoons of peanut butter for extra flavor.
- It’s griddle time: Preheat your skillet over medium heat and lightly grease it with a little coconut oil or butter.
- Cook the pancakes: Pour a ladleful of batter into the skillet and cook for about 3 minutes per side or until you see bubbles forming.
