Ingredients
- 1 cup grated carrots
- 1 cup pure, unsweetened pumpkin puree
- 2-3 cups whole wheat flour (or oat flour)
- 1 large egg
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 350°F (175°C).
- Mix together the grated carrots and pumpkin puree in a large bowl.
- Add the whole wheat flour and mix until a soft dough forms.
- Incorporate the egg and mix until well combined.
- Season with cinnamon and mix thoroughly.
- Roll out the dough to about ½ inch thick on a floured surface.
- Cut into sticks or use cookie cutters for shapes.
- Bake on a parchment-lined baking sheet for 30-35 minutes until golden.
- Cool on a wire rack before serving.
Notes
Store in an airtight container for up to a week, or freeze for longer storage.
