Ingredients
- 1 cup natural peanut butter (unsweetened)
- ½ cup coconut oil (or olive oil)
- 2 cups oats (or oat flour for gluten-free)
- 1 cup finely chopped fresh parsley (or mint/basil)
- Water (as needed for binding)
Instructions
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, combine peanut butter and coconut oil until smooth and creamy.
- Add oats and parsley to the mixture. If dough feels crumbly, add a splash of water.
- Pinch off small portions and roll into mint-sized balls or press them into molds.
- Place onto a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden.
- Let cool completely on a wire rack before serving.
Notes
These mints can be frozen for up to three months. Be mindful of xylitol in peanut butter as it is toxic to dogs.
