Ingredients
- 4 cups chopped fresh broccoli or frozen florets
- 2 cups shredded sharp cheddar cheese
- 1 cup plain Greek yogurt
- 4 cups vegetable or chicken broth
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- Salt & pepper to taste
- Optional Add-Ins: Carrots, mushrooms, or cooked chicken
Instructions
- In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for an additional minute.
- Add chopped broccoli and broth. Bring to a gentle boil, then reduce to a simmer and cook for 15-20 minutes until tender.
- Using an immersion blender, carefully puree the soup until smooth.
- Stir in shredded cheddar cheese and Greek yogurt over low heat until melted and creamy. Season with salt and pepper.
- Ladle into bowls and garnish with additional cheese or fresh herbs. Enjoy!
