Ingredients
- 1 cup pumpkin puree
- 2 cups whole wheat flour
- 1/4 cup maple syrup or honey
- 1/2 cup Greek yogurt
- 1 egg
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tbsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/4 cup brown sugar
- Powdered sugar (for glaze)
- Milk (for glazing)
Instructions
- Preheat oven to 350°F (175°C).
- In a large bowl, mix pumpkin puree, Greek yogurt, maple syrup, and egg until smooth.
- In a separate bowl, whisk flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Gradually mix into wet ingredients until combined.
- Knead dough on a floured surface for a couple of minutes until smooth.
- Roll out dough into a rectangle about 1/4 inch thick.
- In a small bowl, mix brown sugar, cinnamon, and a pinch of salt. Spread pumpkin puree over the dough and sprinkle with the cinnamon mixture.
- Roll dough into a tight log and cut into 1-2 inch pieces.
- Place rolls in a greased baking dish and let rise for 30 minutes.
- Bake for 20-25 minutes until golden brown.
- Make glaze by whisking powdered sugar and milk, then drizzle over warm rolls.
Notes
For added richness, include chopped nuts in the filling.
