- 1 cup natural peanut butter
- 1 ½ cups whole wheat flour
- 1 cup rolled oats
- ½ cup pumpkin puree
- 1 egg (or flaxseed meal + water for vegan)
- 1 pinch cinnamon (optional)
- Water (as needed for dough consistency)
Instructions
- Preheat your oven to 350°F (175°C).
- Mix the dry ingredients: In a large bowl, combine oats, whole wheat flour, and cinnamon.
- Blend the wet ingredients: In another bowl, combine peanut butter, pumpkin puree, and beaten egg.
- Combine wet and dry mixtures, adding water if too crumbly.
- Roll out the dough to about ½ inch thick, using cookie cutters for shapes.
- Bake for 20-25 minutes until golden and let cool on a wire rack.
- Store in an airtight container or freeze for longer-lasting treats.
Notes
Use natural peanut butter without xylitol. Adjust water for dough consistency as required.
