Ingredients

  • 1 cup natural peanut butter
  • 1 ½ cups whole wheat flour
  • 1 cup rolled oats
  • ½ cup pumpkin puree
  • 1 egg (or flaxseed meal + water for vegan)
  • 1 pinch cinnamon (optional)
  • Water (as needed for dough consistency)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix the dry ingredients: In a large bowl, combine oats, whole wheat flour, and cinnamon.
  3. Blend the wet ingredients: In another bowl, combine peanut butter, pumpkin puree, and beaten egg.
  4. Combine wet and dry mixtures, adding water if too crumbly.
  5. Roll out the dough to about ½ inch thick, using cookie cutters for shapes.
  6. Bake for 20-25 minutes until golden and let cool on a wire rack.
  7. Store in an airtight container or freeze for longer-lasting treats.

Notes
