Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1/2 cup peas
  • 1/4 cup carrots, chopped
  • 2 tablespoons peanut butter (unsweetened)
  • 1/4 cup low-sodium chicken or beef broth
  • 1/4 cup plain yogurt
  • 1/2 cup shredded cooked chicken or turkey

Instructions

  1. Boil the cubed sweet potatoes until tender, about 15 minutes, or roast them for deeper flavor.
  2. While sweet potatoes cook, chop the veggies and protein, steaming the fresh vegetables lightly.
  3. In a mixing bowl, combine cooked sweet potatoes, vegetables, protein, peanut butter, and broth. Mix until well combined.
  4. Stuff the mixture tightly into Kongs, leaving a little space at the top.
  5. If you made a larger batch, consider freezing some for later use.
