Instructions
- Preheat your oven to 350°F (180°C) and line a baking dish with parchment paper.
- Combine 2 cups of rolled oats with 1 cup of pumpkin puree and 1 cup of fresh blueberries in a mixing bowl. Add 1/3 cup of honey or maple syrup.
- Crack in 2 eggs or use flax eggs for a vegan twist. Mix until well-combined.
- Sprinkle in 1 teaspoon of cinnamon, 1 teaspoon of baking powder, and a pinch of salt. Gently stir to incorporate.
- Spread the mixture evenly in the prepared dish, smoothing the top gently.
- Bake for 25-30 minutes until edges are golden brown and a toothpick inserted comes out clean.
- Remove from the oven, let cool slightly before slicing, and serve warm or at room temperature.
