Ingredients

  • 2 cups rolled oats
  • 1 cup pumpkin puree
  • 1 cup fresh blueberries
  • 1/3 cup honey or maple syrup
  • 2 eggs or flax eggs for vegan option
  • 1 teaspoon cinnamon
  • 1 teaspoon baking powder
  • Pinch of salt

Instructions

  1. Preheat your oven to 350°F (180°C) and line a baking dish with parchment paper.
  2. Combine 2 cups of rolled oats with 1 cup of pumpkin puree and 1 cup of fresh blueberries in a mixing bowl. Add 1/3 cup of honey or maple syrup.
  3. Crack in 2 eggs or use flax eggs for a vegan twist. Mix until well-combined.
  4. Sprinkle in 1 teaspoon of cinnamon, 1 teaspoon of baking powder, and a pinch of salt. Gently stir to incorporate.
  5. Spread the mixture evenly in the prepared dish, smoothing the top gently.
  6. Bake for 25-30 minutes until edges are golden brown and a toothpick inserted comes out clean.
  7. Remove from the oven, let cool slightly before slicing, and serve warm or at room temperature.
