- 1 lb ground beef
- 8 corn tortillas
- 2 cups enchilada sauce
- 1 cup shredded cheese (Cheddar or Mexican blend)
- 1 tsp ground cumin
- 1 tsp chili powder
- 1 tsp garlic powder
- Salt to taste
- 1 onion, diced
- 2 cloves garlic, minced
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, heat olive oil over medium heat. Sauté diced onion and minced garlic until fragrant.
- Add ground beef, breaking it apart as it cooks. Season with salt, cumin, chili powder, and garlic powder. Cook until browned, about 7-10 minutes.
- Warm corn tortillas briefly in a pan or microwave to make them pliable.
- Spoon a portion of the beef mixture onto each tortilla, roll them up, and place seam-side down in a baking dish.
- Pour enchilada sauce over the topped rolled tortillas.
- Sprinkle shredded cheese on top.
- Cover the dish with aluminum foil and bake for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
- Let rest for a few minutes before serving with sour cream, fresh cilantro, or avocado.
Notes
For added flavor, consider sautéing jalapeños with the ground beef. To add depth, include black beans or cooked spinach in the filling.
