Ingredients
- 2 cups all-purpose flour
- 2 cups granulated sugar
- 3/4 cup cocoa powder (unsweetened)
- 1 1/2 teaspoons baking soda
- 1 1/2 teaspoons baking powder
- 1 teaspoon salt
- 1 teaspoon vanilla extract
- 1 cup buttermilk (or milk mixed with vinegar)
- 1 cup vegetable oil
- 4 large eggs
- 1 cup boiling water
- 1 cup unsweetened shredded coconut
- 1 cup chopped pecans
- 1 cup granulated sugar
- 1/2 cup evaporated milk
- 1/2 cup unsalted butter
- 3 large egg yolks
- 1 teaspoon vanilla extract
Instructions
- Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, whisk together the buttermilk, vegetable oil, and eggs, then stir in the vanilla.
- Gradually add the wet mixture to the dry ingredients, mixing until just combined.
- Carefully stir in the boiling water to the batter.
- Pour the batter evenly between the two prepared pans.
- Bake for 30-35 minutes or until a toothpick inserted comes out clean. Let cool in pans for 10 minutes, then transfer to wire racks.
- To make the frosting, combine sugar, evaporated milk, and butter in a saucepan and cook over medium heat until thickened (about 10 minutes). Remove from heat and mix in pecans, coconut, egg yolks, and vanilla extract. Allow to cool before frosting the cake.
- Layer the cake with frosting in between and cover the top and sides.
Notes
Ensure all ingredients are at room temperature before mixing. Allow the cake to cool completely before frosting to prevent melting.
