- Boneless, skinless chicken breasts or thighs
- Whole grain pasta (spaghetti or fettuccine)
- Fresh garlic
- Parmesan cheese
- Olive oil or butter
- Fresh parsley (or basil)
- Mushrooms
- Spinach
- Salt, pepper, and red pepper flakes
Instructions
- Cook the whole grain pasta according to package instructions until al dente. Reserve a cup of pasta water, then drain the rest.
- In a skillet, heat olive oil or butter over medium heat and sauté minced garlic until fragrant (about 1 minute).
- Add chopped chicken seasoned with salt and pepper to the skillet, cooking until golden and cooked through (5-7 minutes).
- Toss in sliced mushrooms and spinach, sautéing until softened (3-4 minutes).
- Add the drained pasta to the skillet with grated Parmesan, mixing while incorporating reserved pasta water to achieve a creamy sauce.
- Finish with fresh herbs, red pepper flakes, and extra Parmesan if desired. Serve hot.
Notes
To make this dish vegetarian, substitute chicken with shrimp or firm tofu. Use different green leafy vegetables or cheese based on your preference.
