Ingredients
- 3 1/2 cups all-purpose flour
- 1 packet (2 1/4 teaspoons) instant yeast
- 1 1/2 cups warm water
- 2 tablespoons extra virgin olive oil
- 4 cloves fresh garlic, minced
- 1 cup shredded Parmesan cheese
- 1 teaspoon salt
- Optional: Fresh or dried herbs (rosemary, thyme, oregano)
Instructions
- In a large mixing bowl, combine the warm water, yeast, and a pinch of sugar. Let it stand for about 5 minutes until frothy.
- Gradually mix in the flour, salt, and olive oil until a shaggy dough forms.
- Knead on a floured surface for about 5–7 minutes until smooth and elastic.
- Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot for 1 hour, or until doubled in size.
- Once risen, punch down the dough. Transfer it to a baking dish (roughly 9×13 inch) and stretch it to fit.
- Use your fingers to poke dimples into the surface.
- In a small bowl, mix minced garlic with olive oil. Brush this oil mixture generously over the dough, making sure to get into the dimples.
- Sprinkle with shredded Parmesan and any desired herbs.
- Cover the dish and let it rise again for about 30 minutes.
- Preheat your oven to 425°F (220°C). Bake for 20-25 minutes or until golden brown and deliciously aromatic.
- Let the focaccia cool slightly before slicing. Drizzle with a touch more olive oil if you like.
Notes
For extra flavor, consider adding roasted garlic or sun-dried tomatoes into the dough. Always taste the dough before baking, adjusting seasoning as necessary.
