Ingredients

  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 1/2 cups warm water
  • 2 tablespoons extra virgin olive oil
  • 4 cloves fresh garlic, minced
  • 1 cup shredded Parmesan cheese
  • 1 teaspoon salt
  • Optional: Fresh or dried herbs (rosemary, thyme, oregano)

Instructions

  1. In a large mixing bowl, combine the warm water, yeast, and a pinch of sugar. Let it stand for about 5 minutes until frothy.
  2. Gradually mix in the flour, salt, and olive oil until a shaggy dough forms.
  3. Knead on a floured surface for about 5–7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a kitchen towel, and let it rise in a warm spot for 1 hour, or until doubled in size.
  5. Once risen, punch down the dough. Transfer it to a baking dish (roughly 9×13 inch) and stretch it to fit.
  6. Use your fingers to poke dimples into the surface.
  7. In a small bowl, mix minced garlic with olive oil. Brush this oil mixture generously over the dough, making sure to get into the dimples.
  8. Sprinkle with shredded Parmesan and any desired herbs.
  9. Cover the dish and let it rise again for about 30 minutes.
  10. Preheat your oven to 425°F (220°C). Bake for 20-25 minutes or until golden brown and deliciously aromatic.
  11. Let the focaccia cool slightly before slicing. Drizzle with a touch more olive oil if you like.
