- 2 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ¼ teaspoon salt
- 1 cup unsalted butter, softened
- 2 cups granulated sugar
- 4 large eggs
- 2 teaspoons vanilla extract
- 1 cup milk
- ¾ cup rainbow sprinkles
Instructions
- Preheat your oven to 350°F (175°C) and prepare your cake pans by greasing them lightly and lining them with parchment paper.
- In a bowl, whisk together the flour, baking powder, and salt.
- In a mixing bowl, beat the softened butter and granulated sugar until fluffy.
- Beat in the eggs one at a time, then add the vanilla extract.
- Gradually add the dry mixture to the wet ingredients, alternating with milk, until just combined.
- Gently fold in the rainbow sprinkles.
- Divide the batter into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted comes out clean.
- Let the cakes cool for 15 minutes in the pans, then turn them out onto a wire rack to cool completely before frosting.
Notes
For a vegan option, substitute butter with coconut oil and eggs with flaxseed meal mixed with water.
