Ingredients

  • 1 cup pumpkin puree
  • 1 cup natural peanut butter
  • 2 eggs
  • 2 ½ cups whole wheat flour
  • 1 teaspoon cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mix 1 cup of pumpkin puree, 1 cup of peanut butter, and 2 eggs in a mixing bowl until smooth.
  3. Incorporate 2 ½ cups of whole wheat flour and 1 teaspoon of cinnamon gradually until a dough forms.
  4. Roll the dough out on a floured surface to about ½ inch thick and cut into shapes.
  5. Place the cut-out treats on a lined baking sheet.
  6. Bake for 20–25 minutes or until the edges are golden.
  7. Cool the treats on a wire rack.
  8. Freeze them in a zip-top bag or airtight container for later use.

Notes

Make sure to use pure pumpkin and check peanut butter labels for xylitol.
