Ingredients

  • 1 cup Fresh Mint, finely chopped
  • 1 cup Fresh Parsley, finely chopped (flat-leaf variety)
  • 2 cups Whole Wheat Flour (or oat/almond flour as a substitute)
  • 1/2 cup Chicken or Vegetable Broth (low sodium)
  • 1 Egg

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wash and finely chop the fresh mint and parsley.
  3. Combine the whole wheat flour and chopped herbs in a large mixing bowl.
  4. Whisk together the egg and broth in another bowl and pour into the dry ingredients, stirring to form a dough.
  5. Roll out the dough on a floured surface to about 1/4 inch thick.
  6. Shape the treats using cookie cutters or slicing into squares.
  7. Bake for 20-25 minutes until lightly golden.
  8. Cool completely on a wire rack.
  9. Store in the freezer if making a large batch.
