Ingredients
- 1 ½ cups all-purpose flour
- 1 cup granulated sugar
- 1 tsp baking powder
- ½ tsp baking soda
- 1 tsp ground cinnamon
- ½ tsp ground nutmeg
- ½ tsp ground allspice
- 1 cup mixed dried fruits (raisins, currants, chopped dried apricots)
- ⅓ cup vegetable oil
- 2 large eggs
- ½ cup milk
- 1 tsp vanilla extract
- 1 cup powdered sugar (for glaze)
- 1 tbsp milk (for glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
- In a large bowl, combine the flour, baking powder, baking soda, and spices, whisking well.
- In another bowl, mix the sugar, oil, eggs, and milk until well combined.
- Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
- Fold in the dried fruits.
- Pour the batter into the cupcake liners, filling them about two-thirds full.
- Bake for 18-20 minutes, or until a toothpick comes out clean.
- Cool in the pan for a few minutes and then transfer to a wire rack to cool completely.
- For the glaze, whisk together powdered sugar, 1 tbsp of milk, and vanilla extract until smooth.
- Once cooled, drizzle the glaze over the cupcakes.
Notes
Decorate with festive sprinkles or chopped nuts for added flair.
