Ingredients

  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • ½ tsp baking soda
  • 1 tsp ground cinnamon
  • ½ tsp ground nutmeg
  • ½ tsp ground allspice
  • 1 cup mixed dried fruits (raisins, currants, chopped dried apricots)
  • ⅓ cup vegetable oil
  • 2 large eggs
  • ½ cup milk
  • 1 tsp vanilla extract
  • 1 cup powdered sugar (for glaze)
  • 1 tbsp milk (for glaze)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with paper liners.
  2. In a large bowl, combine the flour, baking powder, baking soda, and spices, whisking well.
  3. In another bowl, mix the sugar, oil, eggs, and milk until well combined.
  4. Gradually add the dry ingredients to the wet ingredients, mixing gently until just combined.
  5. Fold in the dried fruits.
  6. Pour the batter into the cupcake liners, filling them about two-thirds full.
  7. Bake for 18-20 minutes, or until a toothpick comes out clean.
  8. Cool in the pan for a few minutes and then transfer to a wire rack to cool completely.
  9. For the glaze, whisk together powdered sugar, 1 tbsp of milk, and vanilla extract until smooth.
  10. Once cooled, drizzle the glaze over the cupcakes.
