Ingredients
- 1 medium zucchini, grated
- 1 cup natural peanut butter
- 1 cup whole wheat flour
- 1 cup rolled oats
- 1 egg
- Optional: 1 tablespoon honey or maple syrup
- Optional: a sprinkle of cinnamon
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Prepare the zucchini by squeezing out excess moisture using a clean kitchen towel.
- Mix the grated zucchini, peanut butter, whole wheat flour, rolled oats, and egg in a large mixing bowl. Add optional honey and cinnamon if desired.
- Knead until a dough forms, adding water if too crumbly.
- Roll the dough on a floured surface to about 1/4 inch thick and cut into shapes with cookie cutters.
- Bake for 20-25 minutes or until golden brown and firm to the touch.
- Cool completely on a wire rack before serving.
Notes
Store the biscuits in an airtight container at room temperature for up to a week, or freeze for later.
