- 2 cups pancake mix
- 1 large egg
- 1 cup milk (or buttermilk)
- 1 teaspoon vanilla extract
- Powdered sugar (for dusting)
- Vegetable oil (for frying)
Instructions
- In a bowl, combine pancake mix, egg, milk, and vanilla extract. Whisk until smooth; the consistency should be thick but pourable.
- Pour about 2 inches of oil into a deep skillet or large pot and heat over medium-high heat. Test the oil by dropping a small dollop of batter; if it sizzles, it’s ready.
- Using a funnel or squeeze bottle, carefully drizzle the batter into the hot oil in a circular pattern to create a spiral. Fry for about 1-2 minutes until golden brown.
- Carefully flip the funnel cake using tongs and cook for another minute until golden. Remove with a slotted spoon and drain on paper towels.
- While still warm, dust generously with powdered sugar.
