Ingredients
- 2 lbs Yukon Gold or red potatoes
- 4 cloves fresh garlic, minced
- 1/4 cup extra virgin olive oil
- Salt, to taste
- Pepper, to taste
- Fresh herbs (rosemary or thyme), for garnish
Instructions
- Preheat your oven to 450°F (232°C).
- Wash and scrub the potatoes thoroughly; no need to peel them.
- Place the potatoes in a large pot, cover with salted water, and bring to a boil. Cook for 15-20 minutes until fork-tender.
- Drain the potatoes and let them steam for a few minutes.
- On a lined baking sheet, arrange the potatoes with space in between and gently press each potato until flattened.
- In a small bowl, mix minced garlic, olive oil, salt, and pepper. Drizzle over each potato.
- Roast in the oven for 25-30 minutes until golden and crispy, flipping halfway through.
- In the last few minutes, sprinkle fresh herbs or cheese on top.
- Serve hot, garnished with extra olive oil or herbs.
Notes
For a richer taste, substitute olive oil with melted butter. You can also add sour cream or cheese for extra creaminess.
