Ingredients

  • 2 lbs Yukon Gold or red potatoes
  • 4 cloves fresh garlic, minced
  • 1/4 cup extra virgin olive oil
  • Salt, to taste
  • Pepper, to taste
  • Fresh herbs (rosemary or thyme), for garnish

Instructions

  1. Preheat your oven to 450°F (232°C).
  2. Wash and scrub the potatoes thoroughly; no need to peel them.
  3. Place the potatoes in a large pot, cover with salted water, and bring to a boil. Cook for 15-20 minutes until fork-tender.
  4. Drain the potatoes and let them steam for a few minutes.
  5. On a lined baking sheet, arrange the potatoes with space in between and gently press each potato until flattened.
  6. In a small bowl, mix minced garlic, olive oil, salt, and pepper. Drizzle over each potato.
  7. Roast in the oven for 25-30 minutes until golden and crispy, flipping halfway through.
  8. In the last few minutes, sprinkle fresh herbs or cheese on top.
  9. Serve hot, garnished with extra olive oil or herbs.

Notes

For a richer taste, substitute olive oil with melted butter. You can also add sour cream or cheese for extra creaminess.
