Instructions
- Prepare your workspace by clearing off your countertop.
- In a mixing bowl, combine shredded coconut, chopped almonds, almond butter, and maple syrup. Add cocoa powder if desired.
- Stir until the mixture sticks together like moist dough. Add more nut butter or syrup if too crumbly.
- Roll small amounts of the mixture into bite-sized balls.
- Coat the truffles in additional shredded coconut or cocoa powder.
- Chill in the refrigerator for at least 30 minutes to firm up.
- Enjoy at room temperature or straight out of the fridge.
