Ingredients
- 2 cups boneless chicken (breast or thighs)
- 2 medium sweet potatoes, peeled and diced
- 1 cup carrots, finely chopped
- 1 cup green beans, chopped
- 1 tablespoon olive oil
- 1 tablespoon fresh parsley (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then chop them into small cubes.
- Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until golden brown, about 7–10 minutes.
- Spread chopped sweet potatoes on a baking sheet, drizzle with olive oil, and sprinkle lightly with salt. Roast in the oven for around 25 minutes.
- Remove the chicken from heat and shred it with two forks. In the same skillet, add carrots and green beans; sauté for about 3–4 minutes.
- Mix shredded chicken with roasted sweet potatoes and sautéed veggies in a large bowl. Allow it to cool completely before serving.
- Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
