Ingredients

  • 2 cups boneless chicken (breast or thighs)
  • 2 medium sweet potatoes, peeled and diced
  • 1 cup carrots, finely chopped
  • 1 cup green beans, chopped
  • 1 tablespoon olive oil
  • 1 tablespoon fresh parsley (optional)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then chop them into small cubes.
  3. Heat olive oil in a large skillet over medium heat. Add chicken pieces and cook until golden brown, about 7–10 minutes.
  4. Spread chopped sweet potatoes on a baking sheet, drizzle with olive oil, and sprinkle lightly with salt. Roast in the oven for around 25 minutes.
  5. Remove the chicken from heat and shred it with two forks. In the same skillet, add carrots and green beans; sauté for about 3–4 minutes.
  6. Mix shredded chicken with roasted sweet potatoes and sautéed veggies in a large bowl. Allow it to cool completely before serving.
  7. Store leftovers in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
